Crafting a pinpoint precise, squeaky clean wine is one of the most boring things we could possibly think of. We prefer embracing your inner creative, and searching for more radical experiences. This has become one of our most cult-followed wines since we began. It's not exactly white wine, nor red - many call it Amber wine...but we just call it Esoterico. We make no additions of any kind - save for sulphur when we bottle the wine. There is no fining or filtration involved, with the wine allowed to clarify by gravity alone - resulting in a slight haze and sediment. This is one of the most enjoyable wines to craft, as there was no preconceived idea of what it must taste like - the chief driver is pure drinkability - a 'scrumptious' quality - mouthwatering acidity and 'say hello!' tannins. It's a Bohemian at heart.
A delicate prosecco that has fruitful aromas of wild apple, acacia flowers and a hint of honey. It has a sleek and balanced palate with persistent perlage.
No new oak is used. Instead, fermentation occurs in cool concrete, followed by 14 months in used French oak barrels. The resulting wine is spicy and rich, with blackberry and plummy fruit, some spice and tobacco leaf notes from the whole-bunch fermentation. It boasts good depth and a tea-scented, full-bodied finish. Great on its own, this will also suit a wide variety of meat dishes.

The palate is complex and layered with flavours of citrus, stone fruit, white blossom and sea salt that complement a richly textured palate with perfectly appointed acidity that lingers intensely on the finish. This sophisticated young wine is both charming and intense. It aptly captures the ethereal nature of the Waitaki and has great aging potential.
